Method

  1. Step 1: Start the oven items

Heat the oven to 200°C / 180°C fan / gas 6. Put the sausages on a tray and roast for 25–30 minutes, turning once, until browned and cooked through with no pink. Add the halved tomatoes, cut side up, seasoned and drizzled with a little oil, for the last 15 minutes.

  2. Step 2: Fry the bacon and black pudding

About 15 minutes before the sausages are ready, heat 1 tbsp oil in a large frying pan and fry the bacon for 3–4 minutes each side, and the black pudding for 2–3 minutes each side. Move to the oven tray to keep warm.

  3. Step 3: Cook the mushrooms and beans

Add the butter to the pan and fry the mushrooms over a high heat for 5 minutes until golden. Season and move to the tray. Warm the beans in a small pan until bubbling.

  4. Step 4: Fry the eggs

Wipe the pan, add the remaining oil and heat to medium. Crack in the eggs and fry for 3–4 minutes, spooning hot oil over the yolks, until the whites are set. Make the toast meanwhile.

  5. Step 5: Serve

Pile everything onto warm plates and serve straight away with ketchup or brown sauce and a pot of tea.

Tips

  • Warm the plates in the bottom of the oven so nothing goes cold.
  • British Lion eggs are considered safe to eat runny, including for pregnant women and young children.

Storing & reheating

Best eaten freshly cooked. Refrigerate any leftover cooked sausages or bacon within 2 hours and eat within 2 days.

Variations

  • Scottish breakfast: add tattie scones and lorne sausage.
  • Vegetarian: use vegetarian sausages, halloumi and hash browns instead of the meat.
