Method

  1. Step 1: Brown the sausages

Heat the oil in a casserole and fry the sausages over a medium heat for 8–10 minutes, turning, until browned all over. Lift out and cut each in half if you like.

  2. Step 2: Cook the vegetables

Add the onion and pepper to the pan and cook for 8 minutes until softened. Stir in the garlic, paprika and tomato purée and cook for 1 minute.

  3. Step 3: Simmer

Add the tomatoes, stock, beans and herbs. Return the sausages, bring to a simmer, cover and cook gently for 30–35 minutes, removing the lid for the last 10 minutes to thicken. Check the sausages are cooked through with no pink in the middle, and season.

Tips

  • Serve with mash, crusty bread or rice.
  • A splash of Worcestershire sauce or a spoon of brown sugar rounds out the sauce.

Storing & reheating

Cool, cover and refrigerate within 2 hours of cooking; eat within 2 days and reheat only once, until steaming hot all the way through.

Freezing

Freeze for up to 3 months. Defrost in the fridge overnight and reheat until steaming hot.

Variations

  • Use chorizo-style sausages and add a pinch of chilli flakes.
  • Add diced sweet potato with the stock (simmer until tender).
