Recipe: Perfect scrambled eggs

Ingredients

  • 4 eggs, large, British Lion stamped
  • 2 tbsp milk or single cream, optional
  • 15g butter
  • salt and black pepper, to taste
  • chopped chives, optional

Method

  1. Step 1: Beat the eggs

Crack the eggs into a bowl, add the milk or cream, if using, and a pinch of salt. Beat lightly with a fork until just combined.

  2. Step 2: Cook gently

Melt the butter in a small non-stick pan over a low heat. Pour in the eggs and leave for 20 seconds, then stir slowly with a spatula, pushing the eggs from the edges into the centre.

  3. Step 3: Finish

Keep stirring gently for 2–3 minutes. When the eggs are softly set but still slightly glossy, take the pan off the heat – they will carry on cooking. Season with pepper, scatter with chives and serve straight away – on hot buttered toast if you like (use gluten-free bread to keep it gluten-free).

Tips

  • Low heat and patience give creamy curds; high heat makes them rubbery and watery.
  • If you're not using British Lion eggs, cook until fully set for babies, pregnant women, older people and anyone with a weakened immune system.

Storing & reheating

Best eaten straight away.

Variations

  • Fold in smoked salmon at the end.
  • Add a handful of grated cheddar just before the eggs set.

Questions people ask

Should I add milk to scrambled eggs?

It's optional – a splash makes them a little softer, but plain eggs and butter taste richer.

Is it safe to eat soft scrambled eggs?

British Lion eggs are considered safe to eat softly cooked by everyone, including pregnant women and children. Other eggs should be cooked until firm for vulnerable groups.
