Method

Step 1: Make the batter
Sift the flour and salt into a large bowl and make a well in the middle. Crack in the eggs, pour in about 50ml of the milk and whisk, gradually drawing in the flour, to make a smooth thick batter. Whisk in the remaining milk and the oil to the consistency of single cream. Rest for 30 minutes if you have time.
-
Step 2: Heat the pan
Set a non-stick frying pan over a medium heat and wipe with a little oil using kitchen paper.
-
Step 3: Cook
Pour in about 3 tbsp of batter and swirl to coat the base thinly. Cook for about 1 minute until the underside is golden, then loosen with a palette knife and flip (or toss!). Cook for 30 seconds more.
-
Step 4: Serve
Slide onto a warm plate and keep warm while you cook the rest, wiping the pan with oil between each. Serve with a squeeze of lemon and a sprinkle of sugar.
Tips
- The first pancake is usually a test – adjust the heat and batter thickness from there.
- Stack cooked pancakes between sheets of baking paper on a plate over a pan of simmering water to keep warm.
Storing & reheating
Leftover pancakes keep, covered, in the fridge for 2 days. The batter can be made up to a day ahead and kept chilled.
Freezing
Interleave cooked pancakes with baking paper and freeze for up to 2 months. Reheat in a dry pan or microwave.
Variations
- Savoury: fill with ham and cheese, or spinach and ricotta.
- American-style: use self-raising flour, 1 egg, 150ml milk and 1 tsp baking powder for thick, fluffy pancakes.

Questions people ask
When is Shrove Tuesday?
Shrove Tuesday (Pancake Day) is the day before Ash Wednesday, so it moves each year – between early February and early March.
Why rest the batter?
Resting lets the flour absorb the liquid, giving more tender pancakes that are less likely to tear.
