Homemade vanilla custard

Smooth, rich proper custard made with egg yolks, milk and cream. A little cornflour makes it almost foolproof.

Recipe: Homemade vanilla custard

Ingredients

  • 400ml whole milk
  • 150ml double cream
  • 1 vanilla pod, split, or 1 tsp vanilla extract (check the label if you need it gluten-free)
  • 4 large egg yolks
  • 50g caster sugar
  • 2 tsp cornflour, check it's labelled gluten-free if needed

Method

  1. Step 1: Infuse the milk

Put the milk and cream in a pan. Scrape in the vanilla seeds and add the pod (if using extract, add it at the end). Heat until just steaming with small bubbles at the edge – don't boil.

  2. Step 2: Whisk the yolks

In a heatproof bowl, whisk the egg yolks, sugar and cornflour together until smooth and pale.

  3. Step 3: Combine

Remove the vanilla pod, then slowly pour the hot milk onto the yolks, whisking constantly.

  4. Step 4: Thicken

Pour back into the pan and cook over a low heat, stirring constantly with a wooden spoon or spatula, for 5–8 minutes until the custard thickens enough to coat the back of the spoon (a finger drawn through it leaves a clear line). Don't let it boil.

  5. Step 5: Finish

Strain through a sieve into a jug and stir in the vanilla extract if using. Serve hot, or cover the surface with baking parchment to stop a skin forming as it cools.

Tips

  • If the custard starts to look grainy, take it off the heat immediately and whisk hard – or blitz with a stick blender.
  • Use the leftover egg whites for pavlova or meringues.

Storing & reheating

Cool quickly, cover and refrigerate within 2 hours. Eat within 2 days. Reheat gently, stirring, until steaming hot.

Freezing

Not recommended – it can separate when defrosted.

Variations

  • Thick custard for trifle: increase the cornflour to 1 tbsp and cool completely.
  • Brandy custard: stir in 2–3 tbsp brandy at the end for Christmas pudding.

Questions people ask

Why add cornflour?

It stabilises the yolks so the custard is far less likely to split or scramble. Purists leave it out and cook very gently.

Is homemade custard gluten-free?

Yes, if your cornflour and vanilla are labelled gluten-free.
