Method
-
Step 1: Prepare the potatoes
Heat the oven to 200°C / 180°C fan / gas 6. Scrub the potatoes, dry well and prick all over with a fork. Rub with oil and salt.
-
Step 2: Bake
Place directly on the oven shelf (or a tray) and bake for 1 hour–1 hour 15 minutes, depending on size, until the skins are crisp and a knife slides easily into the centre.
-
Step 3: Make the fillings
Mix the tuna with the mayonnaise, spring onions and sweetcorn. Heat the beans in a small pan until bubbling. Get the cheese and coleslaw ready.
-
Step 4: Serve
Cut a cross in the top of each potato, squeeze the sides to open it up and add a knob of butter. Spoon in your chosen filling and serve.
Tips
- For a speedier version, microwave the pricked potatoes for 8–10 minutes until nearly soft, then crisp in a hot oven for 20–25 minutes.
- Bake extra potatoes for tomorrow's lunch – scoop out, mash with cheese and return to the skins.
Storing & reheating
Cool baked potatoes quickly and refrigerate within 2 hours (don't leave them wrapped in foil at room temperature). Eat within 2 days and reheat until steaming hot.
Freezing
Plain baked potatoes or twice-baked filled skins freeze for up to 1 month.
Variations
- Chilli con carne, coronation chicken, or prawn cocktail make great fillings.
- Use sweet potatoes, baking for 45–55 minutes.

Questions people ask
Should I wrap jacket potatoes in foil?
Not if you want crispy skins – foil steams them. Bake unwrapped on the oven shelf.
How do I know when they're done?
The skin should be crisp and a skewer should slide into the centre with no resistance.
