Method

  1. Step 1: Heat the oven

Heat the oven to 200°C / 180°C fan / gas 6. Line a baking tray with foil or baking paper.

  2. Step 2: Season

Lay the salmon on the tray. Mix the melted butter, garlic, lemon zest and juice and spoon over the fish. Season and top with lemon slices.

  3. Step 3: Bake

Bake for 10–15 minutes, depending on thickness (roughly 4 minutes per 1cm), until the salmon is opaque and flakes easily in the thickest part.

  4. Step 4: Serve

Scatter with herbs and serve with the pan juices spooned over.

Tips

  • Wrapping each fillet in a foil or paper parcel keeps it extra moist.

Storing & reheating

Cool, cover and refrigerate within 2 hours; eat within 2 days; reheat once until steaming hot.

Variations

  • Add cherry tomatoes and asparagus to the tray for a one-tray dinner.
  • Top with a crust of breadcrumbs, Parmesan and parsley (no longer gluten-free).
