Method

  1. Step 1: Mix the sauce

Stir the soy sauce, mirin, honey, ginger and garlic together.

  2. Step 2: Cook the salmon

Pat the salmon dry. Heat the oil in a non-stick pan over a medium-high heat and cook the salmon skin-side down for 4–5 minutes until the skin is crisp. Turn and cook for 2–3 minutes more, until the flesh flakes easily and is opaque in the centre.

  3. Step 3: Glaze

Turn the heat down, pour in the sauce and let it bubble for 1–2 minutes, spooning it over the fish until syrupy. Don't let it burn.

  4. Step 4: Serve

Serve on rice with greens, with the sauce spooned over and topped with sesame seeds and spring onion.

Tips

  • Turn the heat down before adding the sauce: honey burns quickly.

Storing & reheating

Cool, cover and refrigerate within 2 hours; eat within 2 days; reheat once until steaming hot.

Variations

  • Bake instead: brush with sauce and roast at 200°C / 180°C fan / gas 6 for 12–15 minutes.
