Method

  1. Step 1: Prepare

Heat the oven to 180°C / 160°C fan / gas 4. Line two large baking trays with baking parchment.

  2. Step 2: Cream

Beat the butter and both sugars together until creamy and lighter in colour, then beat in the egg and vanilla.

  3. Step 3: Add the dry ingredients

Sift in the flour, bicarbonate of soda and salt and mix to a soft dough. Stir in the chocolate chips.

  4. Step 4: Portion

Roll into 16 balls (about 40g each) and space well apart on the trays – they spread.

  5. Step 5: Bake

Bake for 10–12 minutes until golden at the edges but still pale and soft in the middle. They will look underdone; that's what keeps them chewy.

  6. Step 6: Cool

Leave on the trays for 5 minutes to firm up, then transfer to a wire rack.

Tips

  • Chilling the dough balls for 30 minutes before baking gives thicker cookies that spread less.
  • Press a few extra chocolate pieces on top of each ball for that bakery look.

Storing & reheating

Keep in an airtight tin for up to 4 days.

Freezing

Freeze dough balls on a tray, then bag. Bake from frozen, adding 2–3 minutes. Baked cookies freeze for up to 3 months.

Variations

  • Double chocolate: replace 25g of the flour with cocoa powder.
  • Salted: sprinkle a few flakes of sea salt on each cookie before baking.

Questions people ask

Is it safe to eat raw cookie dough?

No – raw flour and raw egg can carry harmful bacteria. Bake the dough before eating.

Why did my cookies spread too much?

Butter that was too soft or melted, or a hot tray. Chill the dough and use cool trays.
