Method
-
Step 1: Soak the noodles
Cover the noodles with warm (not boiling) water for 20–30 minutes or as the pack says, until pliable but still firm. Drain. Mix the sauce ingredients.
-
Step 2: Cook the prawns
Heat the oil in a wok over a high heat. Fry the garlic and shallot for 30 seconds, then add the prawns and stir-fry for 2 minutes until pink all over and cooked through.
-
Step 3: Add the egg
Push everything to one side, pour the eggs into the space and let them set for a few seconds, then scramble roughly.
-
Step 4: Toss the noodles
Add the noodles and sauce and toss for 2–3 minutes until the noodles are tender and have absorbed the sauce; add a splash of water if they stick. Add the beansprouts and spring onions and toss for 30 seconds. Serve with peanuts, chilli flakes, lime wedges and coriander.
Tips
- Under-soak rather than over-soak the noodles: they finish cooking in the wok.
- Contains peanuts, fish, crustaceans and egg.
