Method

  1. Step 1: Season the chicken

Mix the spice mix ingredients and toss with the chicken and 1 tbsp oil.

  2. Step 2: Char the veg

Heat the remaining oil in a large frying pan over a high heat. Cook the peppers and onion for 5–6 minutes until softened and charred in places. Tip onto a plate.

  3. Step 3: Cook the chicken

Add the chicken to the hot pan in a single layer (in batches if needed) and cook for 6–8 minutes, turning, until golden and cooked through, with no pink in the middle. Return the veg, squeeze over the lime and toss.

  4. Step 4: Warm the tortillas and serve

Warm the tortillas in a dry pan for 20 seconds a side, or wrapped in foil in a low oven. Serve everything at the table for people to fill their own.

Tips

  • Don't crowd the pan, or the chicken stews instead of browning.

Storing & reheating

Cool, cover and refrigerate within 2 hours; eat within 2 days; reheat once until steaming hot.

Variations

  • Steak fajitas: use 400g sirloin strips, cooked for 2–3 minutes.
  • Veggie: use halloumi or portobello mushrooms.
