Method
-
Step 1: Brown the meat
Heat the oil in a large casserole and brown the chicken for 5 minutes. Add the chorizo and cook for 2 minutes until it releases its oil. Lift out with a slotted spoon.
-
Step 2: Cook the veg
Add the onion, pepper and celery and cook for 8 minutes until soft. Add the garlic, Cajun seasoning and paprika and cook for 1 minute.
-
Step 3: Simmer the rice
Stir in the rice, then add the tomatoes, stock, thyme, chicken and chorizo. Bring to the boil, cover and simmer gently for 20–25 minutes, stirring once or twice, until the rice is tender and the liquid absorbed. Add the prawns for the last 5 minutes, until pink and cooked through.
-
Step 4: Finish
Check the chicken is cooked through with no pink, season and scatter with spring onions. Serve with hot sauce.
Tips
- Check your Cajun seasoning: some blends are very salty, so season at the end.
Storing & reheating
Cool rice quickly (spread it out), cover and refrigerate within 1 hour if possible and no more than 2; eat within 1 day and reheat only once until steaming hot.
Freezing
Freeze (without prawns) for up to 1 month. Defrost in the fridge and reheat once until steaming hot.
Variations
- Vegetarian: use smoked tofu, extra peppers, kidney beans and vegetable stock.
Allergies: Always check the labels of the ingredients you buy for allergens — our dietary tags are a guide, not a guarantee.
