Method

  1. Step 1: Fill

Lightly mash the beans with the paprika. Spread over two tortillas, scatter with cheese, sweetcorn, spring onions and jalapeño, then top with the remaining tortillas and press down.

  2. Step 2: Cook

Brush a non-stick pan with a little oil and heat over a medium heat. Cook one quesadilla for 2–3 minutes until golden underneath, then flip carefully (a plate helps) and cook for 2 minutes more until the cheese has melted.

  3. Step 3: Serve

Cut into wedges and serve with salsa and soured cream.

Tips

  • Keep the heat medium so the cheese melts before the tortilla burns.
  • Check the cheese is made with vegetarian rennet if cooking for vegetarians.

Storing & reheating

Cool, cover and refrigerate within 2 hours; eat within 2 days; reheat once until steaming hot.

Variations

  • Add leftover cooked chicken, shredded, and heat until steaming hot.
  • Use folded single tortillas (half-moons) for easier flipping.
