Method

  1. Step 1: Roast the vegetables

Heat the oven to 200°C / 180°C fan / gas 6. Put the tomatoes (cut side up), pepper, onion and garlic in a roasting tin. Drizzle with oil, sprinkle with sugar, salt and pepper, and roast for 35–40 minutes until soft and slightly charred.

  2. Step 2: Simmer

Squeeze the garlic from its skins into a saucepan and add everything from the tin, including the juices. Stir in the tomato purée and stock, bring to the boil and simmer for 10 minutes.

  3. Step 3: Blend

Blend until smooth. For a silky finish, push through a sieve. Season and serve with torn basil and a drizzle of olive oil.

Tips

  • Out of season, use 2 x 400g cans of plum tomatoes and skip roasting – just simmer with softened onion and garlic for 20 minutes.
  • A swirl of cream (not vegan) makes it more indulgent.

Storing & reheating

Cool, cover and refrigerate within 2 hours of cooking; eat within 2 days and reheat only once, until steaming hot all the way through.

Freezing

Freeze for up to 3 months. Defrost in the fridge and reheat until steaming hot.

Variations

  • Add a pinch of chilli flakes or smoked paprika before roasting.
  • Stir in a can of drained butter beans before blending for a heartier soup.

Questions people ask

Do I need to peel the tomatoes?

No – blending (and sieving, if you like) takes care of the skins.

How can I make it creamier without dairy?

Blend in a few tablespoons of oat cream or a handful of soaked cashews.
