Method
-
Step 1: Heat the oven
Heat the oven to 150°C / 130°C fan / gas 2. Grease a 1.5 litre ovenproof dish with butter.
-
Step 2: Combine
Put the rice and sugar in the dish, pour over the milk and stir in the vanilla. Dot with the butter and grate nutmeg generously over the top.
-
Step 3: Bake
Bake for 2 hours, stirring once or twice in the first hour to stop the rice clumping, then leave undisturbed so a golden skin forms. It's ready when the rice is very soft and the pudding is creamy but still loose – it thickens as it stands.
-
Step 4: Serve
Rest for 10 minutes and serve warm, with a spoonful of jam if you like.
Tips
- Pudding rice is essential – its starch makes the creamy texture. Risotto rice works at a pinch.
- For an extra-rich pudding, replace 150ml of the milk with double cream.
Storing & reheating
Cool quickly, cover and refrigerate within 2 hours (rice dishes are more of a risk if left out). Eat within 1 day, cold or reheated once until piping hot.
Freezing
Not recommended – the texture becomes grainy.
Variations
- Stovetop: simmer everything gently in a heavy pan for 30–40 minutes, stirring often.
- Orange and cardamom: add pared orange zest and 3 crushed cardamom pods instead of vanilla.

Questions people ask
Why is cooked rice a food safety risk?
Uncooked rice can contain spores of Bacillus cereus that survive cooking. If cooked rice sits at room temperature, they can grow and produce toxins. Cool it quickly, chill it and eat within a day.
Is rice pudding gluten-free?
Yes – rice, milk, sugar, butter and nutmeg are naturally gluten-free. Check the vanilla extract label if you're coeliac.
